Parmaham Disossato origin. A DOP (Protected Denomination of Origin) cured ham with a distinctive flavour made according to the standards of the Parma Consortium. It is made from large locally raised pigs which are fed a strict diet and is then seasoned. The Prosciutto di Parma has a high nutritional value, it has a high vitamin, protein and iron content. It has also a lower fat content in comparison with other cured hams since it is partially de-greased at the end of the seasoning period. It is also de-boned before being vacuum packed. Coppa Zibello A type of salami made of pork that is typically from Northern Italy. It is made from equal parts of lean and fatty boned pig's shoulder rolled with saltpetre, salt, black pepper, and nutmeg and cured for about three months. It has therefore a homogenous interior of red meat flecked with pinkish-white spots what results in a delicate taste that varies according to the region of production. Schinken Speck 1/2 A square shaped red-brown pork product made from a boned ham that is moderately salted and seasoned, cold-smoked and then aged according to local practices and traditions. Its name originates from the 18th century and it is a traditional product from the province of Bolzano. It has a strong smoked and spicy scent as the meat is flavoured with black pepper, pimento, garlic and juniper berry during the salting process. Available in a vacuum packed 2,7kg size |

Pancetta A salt-cured and smoked and slightly cooked pork belly with rind. It is characterised by long veins of fat parallel to the rind and a pinky-brown colour.
